Sherried Chocolate Fudge

Ingredients
  • 185 g (6 oz.) can evaporated milk
  • 1 2/3 cups sugar
  • ½ teaspoon salt
  • 100 g (3 1/2 oz.) pkt white marshmallows
  • 125 g (4 oz.) dark chocolate
  • 1 teaspoon vanilla
  • 2 tablespoons sweet sherry
Recipe
  1. Stir sugar, salt and milk in saucepan over low heat until sugar has dissolved.
  2. Brush down sides of saucepan with brush dipped in hot water, making sure there are no sugar crystals on sides of pan.
  3. Bring to boil; boil gently 5 minutes, stirring constantly.
  4. Remove from heat; add chopped marsh-mallows, chopped chocolate, vanilla and sherry; stir until marshmallows and chocolate have melted and mixture begins to thicken.
  5. Pour into greased 20 cm (8 in.) square slab tin lined with greased greaseproof paper.
  6. When set, cut fudge into squares.
