Sherried Chocolate Fudge

Ingredients
- 185 g (6 oz.) can evaporated milk
- 1 2/3 cups sugar
- ½ teaspoon salt
- 100 g (3 1/2 oz.) pkt white marshmallows
- 125 g (4 oz.) dark chocolate
- 1 teaspoon vanilla
- 2 tablespoons sweet sherry
- Stir sugar, salt and milk in saucepan over low heat until sugar has dissolved.
- Brush down sides of saucepan with brush dipped in hot water, making sure there are no sugar crystals on sides of pan.
- Bring to boil; boil gently 5 minutes, stirring constantly.
- Remove from heat; add chopped marsh-mallows, chopped chocolate, vanilla and sherry; stir until marshmallows and chocolate have melted and mixture begins to thicken.
- Pour into greased 20 cm (8 in.) square slab tin lined with greased greaseproof paper.
- When set, cut fudge into squares.
