Ingredients
- 175g (6oz) butter or margarine
- 175g (6oz) soft brown sugar
- 2 eggs, beaten
- 175g (6oz) golden syrup
- 50g (2oz) ground almonds
- 175g (6oz) plain flour
- 50g (2oz) cocoa powder
- 150ml (¼ pint) milk
- 1.25ml (¼ tsp) bicarbonate of soda
- 1 egg white
- 175g (6oz) icing sugar
- 15ml (1 tbsp) golden syrup
- 45ml (3 tbsp) water Pinch of salt
- 5ml (1 tsp) lemon juice
- chocolate curls
- Grease and line a 20cm (8") cake tin with greaseproof paper.
- Cream the butter and sugar together until light and fluffy.
- Add the eggs gradually, beating well after each addition.
- Sieve together all the dry ingredients.
- Add the golden syrup and the milk to the creamed mixture.
- Fold in the dry ingredients and beat well with a wooden spoon.
- Pour the mixture into the prepared cake tin.
- Bake until a skewer inserted in the middle comes out clean.
- Turn out and cool on a wire rack.
- To make the frosting: place all the frosting ingredients into a basin over a saucepan of hot water; whisk until the icing stands in peaks.
- Remove from the heat and continue whisking until the mixture has cooled.
- Spread over the cake using a palette knife. (The frosting must be used as soon as it is made.)
- Decorate with the chocolate curls.
