Ingredients
  • 5 eggs, separated
  • 175g (6oz) caster sugar
  • 75g (3oz) plain chocolate, melted
  • 75g (3oz) plain flour
  • 2.5ml (½ tsp) ground nutmeg
  • 2.5ml (½ tsp) ground cinnamon
  • 2.5ml (½ tsp) ground cloves
  • ground cinnamon
  • icing sugar
Recipe
  1. Butter and line a 20cm (8") spring form cake tin with greaseproof paper (use a tin that has a central funnel).
  2. Brush the paper with melted butter and dust with flour.
  3. Put the egg yolks and sugar into a mixing bowl and beat them well until the mixture will fall from the whisk in a thick ribbon.
  4. Stir in the melted chocolate.
  5. Sieve together the flour, nutmeg, cinnamon and cloves, and fold into the cake mixture.
  6. Whisk the egg whites until stiff but not dry.
  7. Gently fold in the beaten egg whites, a little at a time.
  8. Pour the mixture into the tin. Bake in a pre­heated oven for 40-50 minutes, or until a skewer inserted into the middle comes out clean.
  9. Remove the cake from the oven and let it cool in the tin on a wire rack, for 10 minutes.
  10. Turn the cake out to cool completely.
  11. Dust the top of the cake with a little ground cinnamon and/or icing sugar.
