Chocolate Spice Cake

Ingredients
- 5 eggs, separated
- 175g (6oz) caster sugar
- 75g (3oz) plain chocolate, melted
- 75g (3oz) plain flour
- 2.5ml (½ tsp) ground nutmeg
- 2.5ml (½ tsp) ground cinnamon
- 2.5ml (½ tsp) ground cloves
- ground cinnamon

- Butter and line a 20cm (8") spring form cake tin with greaseproof paper (use a tin that has a central funnel).
- Brush the paper with melted butter and dust with flour.
- Put the egg yolks and sugar into a mixing bowl and beat them well until the mixture will fall from the whisk in a thick ribbon.
- Stir in the melted chocolate.
- Sieve together the flour, nutmeg, cinnamon and cloves, and fold into the cake mixture.
- Whisk the egg whites until stiff but not dry.
- Gently fold in the beaten egg whites, a little at a time.
- Pour the mixture into the tin. Bake in a preheated oven for 40-50 minutes, or until a skewer inserted into the middle comes out clean.
- Remove the cake from the oven and let it cool in the tin on a wire rack, for 10 minutes.
- Turn the cake out to cool completely.
- Dust the top of the cake with a little ground cinnamon and/or icing sugar.
