Chocolate Pistachio Loaf

Ingredients
- 2 eggs
- A knob of butter
- 30ml (2 tbsp) milk
- 25g (1oz) ground almonds
- 50g (2oz) caster sugar
- 50g (2oz) plain chocolate, chopped
- 50g (2oz) pistachio nuts, chopped
- 100g (4oz) self-raising flour
- 100g (4oz) butter or margarine, softened
- 175g (6oz) plain chocolate, chopped or grated
- Grease and line a 450g (1lb) loaf tin.
- Put all the cake ingredients into a mixing bowl and beat until they are well mixed.
- Pour the mixture into the prepared tin.
- Bake in a preheated oven for 1 hour 15 minutes, or until cooked.
- Turn the cake out of the tin and leave to cool on a wire rack.
- For the icing melt the chocolate in a basin over a pan of hot water.
- Beat the knob of butter (the size of a walnut) into the chocolate and pour evenly over the cake.
- Sprinkle with chopped pistachio nuts.
