Ingredients
  • 2 eggs
  • A knob of butter
  • 30ml (2 tbsp) milk
  • 25g (1oz) ground almonds
  • 50g (2oz) caster sugar
  • 50g (2oz) plain chocolate, chopped
  • 50g (2oz) pistachio nuts, chopped
  • 100g (4oz) self-raising flour
  • 100g (4oz) butter or margarine, softened
  • 175g (6oz) plain chocolate, chopped or grated
Recipe
  1. Grease and line a 450g (1lb) loaf tin.
  2. Put all the cake ingredients into a mixing bowl and beat until they are well mixed.
  3. Pour the mixture into the prepared tin.
  4. Bake in a pre­heated oven for 1 hour 15 minutes, or until cooked.
  5. Turn the cake out of the tin and leave to cool on a wire rack.
  6. For the icing melt the chocolate in a basin over a pan of hot water.
  7. Beat the knob of butter (the size of a walnut) into the chocolate and pour evenly over the cake.
  8. Sprinkle with chopped pistachio nuts.
