Chocolate Orange Cake

Ingredients
- 225g (8oz) plain flour
- 75g (3oz) cocoa powder
- 225g (8oz) butter
- 275g (10oz) caster sugar
- 2 beaten eggs
- 250ml (8 fl oz) buttermilk
- 225g (8oz) butter
- Grated orange rind of 1 orange
- 225g (8oz) icing sugar, sieved
- Juice of ½ an orange
- Fresh orange segments or slices
- Grease and line two 20cm (8") sandwich tins.
- Sieve together the cocoa and the flour.
- Cream the butter and sugar together until light and fluffy; gradually add the beaten eggs.
- Stir the buttermilk into the mixture, and then fold in the cocoa and flour.
- Turn the mixture into the prepared tins. Bake for 40 minutes.
- Remove the cakes from the oven; turn out of the tins and allow to cool on a wire rack.
- When the cakes are cold, split each cake into two layers.
- To make the icing: cream the butter with the orange rind until soft; beat in the icing sugar, alternately with the orange juice.
- Sandwich the cakes together with some of the butter icing and spread the remaining icing on the top and the sides of the cake.
- "Rough" with a fork and decorate with the orange slices or segments.
Man, my grandmomma was Italian and she made the most amazing meatballs I ever tasted, like you wouldnt believe. Sadly, she didnt leave a single recipe for us so I’ve been trying to work it out on my own… slowly working my through the meatball recipes here, I still cant figure out what her secret ingredient was though!!!
