Chocolate Lemon Cake

Ingredients
- 3 eggs
- Crystallized orange & lemon slices
- 100g (4oz) melted plain chocolate
- 175g (6oz) butter or margarine
- 175g (6oz) soft brown sugar
- 175g (6oz) butter
- 225g (8oz) self-raising flour
- 450g (1lb) icing sugar, sieved
- 1 Grated rind of a lemon
- 30ml (2 tbsp) lemon juice
- Grease and line a 1kg (2lb) rectangular tin or loaf tin.
- Cream the butter and sugar together until light and fluffy.
- Beat in the eggs, one at a time, adding a little sieved flour with each egg.
- Beat in the lemon rind and remaining flour, and then the chocolate.
- Pour into the prepared tin.
- Bake in the oven for 40-45 minutes.
- Turn onto a wire rack to cool.
- To make the icing place the butter, icing sugar and lemon juice and into a mixing bowl
- Beat together with a wooden spoon until well mixed.
- Cut the cake in half and use half the butter cream to sandwich the cake together.
- Spread the remaining icing on the top of the cake.
- Decorate with crystallized orange and lemon slices.
