Ingredients
  • 3 eggs
  • Crystallized orange & lemon slices
  • 100g (4oz) melted plain chocolate
  • 175g (6oz) butter or margarine
  • 175g (6oz) soft brown sugar
  • 175g (6oz) butter
  • 225g (8oz) self-raising flour
  • 450g (1lb) icing sugar, sieved
  • 1 Grated rind of a lemon
  • 30ml (2 tbsp) lemon juice
Recipe
  1. Grease and line a 1kg (2lb) rectangular tin or loaf tin.
  2. Cream the butter and sugar together until light and fluffy.
  3. Beat in the eggs, one at a time, adding a little sieved flour with each egg.
  4. Beat in the lemon rind and remaining flour, and then the chocolate.
  5. Pour into the prepared tin.
  6. Bake in the oven for 40-45 minutes.
  7. Turn onto a wire rack to cool.
  8. To make the icing place the butter, icing sugar and lemon juice and into a mixing bowl
  9. Beat together with a wooden spoon until well mixed.
  10. Cut the cake in half and use half the butter cream to sandwich the cake together.
  11. Spread the remaining icing on the top of the cake.
  12. Decorate with crystallized orange and lemon slices.
