  • 2 large wooden knitting needles
  • 10 chocolate flakes
  • Butter Icing (see recipe)
  • 10ml (2 tsp) cocoa powder
  • 25cm (10") square cake board
Recipe
  1. Bake the family chocolate cake mixture in a 23cm (9 inch) square cake tin, as directed.
  2. Cut the cake in half and sandwich the two halves together using some of the butter icing
  3. Put on the cake board.
  4. Mix the coca powder with 10ml (2 tsp) boiling water and add this to the remaining butter icing.
  5. Mix until smooth.
  6. Then add an extra 15ml (1 tbsp) icing sugar to the icing so it will pipe better.
  7. Spread some of this icing over the top of the cake.
  8. With a warmed knife knife, cut 4 flakes in half and arrange them along the edge of the cake.
  9. Cut 4 flakes into quarters and place them with two pieces alternately, vertically and horizontally.
  10. Then cut two flakes into eight and repeat this process.
  11. Put the knitting needles into the cake; one goes on top, and the other goes through the center filling, so that the handles cross.
  12. Use the remaining icing to fill a piping bag fitted with a star nozzle.
  13. Pipe sticks of icing over the top needle.
  14. Sprinkle the sugar strands over the top of the cake in a flaked pattern.
